A Chef, a Culinary Vision of Travel
With this same dedication to excellence, we chose to collaborate with French Chef Paul Caussé, a passionate culinary talent with a unique and inspiring background.
Trained at the prestigious Ferrandi School in Paris, and shaped by experiences in the kitchens of L’Astrance in Paris and Hyo Tey in Kyoto, Paul embodies a new generation of chefs for whom cuisine is a universal language, and an invitation to travel.
Today, he runs two intimate restaurants in a picturesque Provençal village, Bistrot l’Ormeau and La Veillée de Castellar, where he blends local flavors with creativity and precision.
At our side on every Private Jet Expedition, Paul designs an exclusive in-flight menu for each leg of your journey, offering a choice between a refined “classic” dish and a bold creation inspired by a fusion of the culinary traditions of our departure and destination countries.

The Art of Pairing: Our Partnership with Caves Taillevent
To further elevate the onboard gastronomic experience, we’ve partnered with one of France’s most respected institutions: Les Caves Taillevent. Their Executive Head Sommelier, Paul Robineau, has curated a bespoke wine list, entirely aligned with the spirit of excellence and luxury shared by Safrans du Monde and Taillevent.
This exclusive selection includes 40 French and international references, mostly European, some iconic, others rare and little-known. In total, over 500 bottles are loaded on board for this World Tour. Each wine has been thoughtfully chosen for its harmony with the destination, meaning no two flights feature the same wines, every journey is a new sensory chapter.
As Paul Robineau puts it:
“This wine list is the result of a shared passion between Safrans du Monde and Maisons Taillevent: a passion for travel, and especially for sensory journeys. French wines make up 70% of the selection, complemented by exceptional bottles from Germany, Italy, and Spain. Every wine was selected with a biodynamic approach. Sending these rare and unique wines into the air for a tasting at 10,000 meters is an extraordinary and thrilling experience. We’re proud to be part of this one-of-a-kind World Tour.”
